Saturday May 11th is World Gin Day and what better way to celebrate that with a delicious gin cocktail, using none other than the ‘best gin in the world’. Based in Donaghadee, The Copeland Distillery was recently awarded the Best Contemporary Gin Trophy for its Irish Gin at the annual International Spirit and Wine Competition (IWSC). Now they have created the perfect recipe for those who want a change from the classic G&T. It’s a match made in heaven using ginger and gin, and just the right balance of sweet and spicy!
- 50ml Copeland Irish Gin
- 10ml Cherry Liquor
- 1 fresh lime
- 60ml pineapple juice
- 125ml Ginger Beer
- Pour the Irish Gin and Cherry Liquor into a cocktail shaker.
- Squeeze in the juice of one fresh lime before adding 60ml of pineapple juice.
- Add ice and shake! Transfer into a large glass, add the ginger beer and stir.
- Pour the cocktail mix into a tall coupe glass and top with crushed ice, before adding a slice of ginger and cherries to garnish.

In addition to sampling this delicious creation, gin lovers can celebrate World Gin Day with a day out at the Co. Down premises where the Copeland Distillery has recently taken advantage of the amendments to Northern Ireland’s Licensing Order 1996.
The new legislation allows local producers of craft beers and spirits to sell their own products at their own premises. This means on-site visitors who partake in Distillery tours will now be able to sample and purchase Copeland’s portfolio of spirits on-site, whilst seeing first-hand how the products are made. Visitors to the distillery café & shop will also be able to buy Copeland’s award-winning range of gin, rum and whiskey.
