SHU Restaurant launches Crème de la Crème of Chef Apprenticeships: VIDEO REPORT

Do you know your sauté from your simmer? Or your baste from your blanch? Do you have a passion for all things culinary and an ability to rival any young MasterChef hopeful? If so, and you are aged between 16 and 24, and are looking for a serious career in chefing, then SHU Restaurant wants to hear from you.

For the first time ever, SHU is opening the doors of their multi-award winning kitchen, to four of the best young cooks in Northern Ireland, as they launch the SHU Chef Apprentice Programme in partnership with Belfast Metropolitan College.

Located on the Lisburn Road, SHU secured its position as one of the best restaurants in Northern Ireland some 17 years ago, when it first launched in the city. Famed for its classical French and modern European-style cuisine, it held the highly coveted title of Best Restaurant in Northern Ireland at the UK National Restaurant Awards for three consecutive years (2012-2014) and is listed in the Sunday Times Top 100 Restaurants in Ireland amongst a host of other accolades.

The new Apprenticeship programme has been launched within SHU’s renowned ‘Centre for Cooking Excellence’, which is headed up by Head Chef, Brian McCann, former Great British Menu star, who says now has never been a better time to launch the programme. He said: “We are so excited to be launching the apprenticeship programme today in partnership with Belfast Met.

“At SHU we are serious about nurturing, inspiring and shaping the very best talent entering the hospitality industry, to help them become exceptional chefs able to work anywhere in the world.

“This is a brilliant opportunity for four young people who aren’t afraid of hard work and have a genuine desire to work as a professional chef.

“I started my own career as an apprentice and I value the essential role it plays in our industry. We have had many young cooks through our kitchen, some of whom have gone on to work in some of the world’s most renowned restaurants.”

Brian concluded: “I want to urge any young cook who has a real passion and determination to succeed in this industry to get in touch and apply for this amazing opportunity. No experience is necessary, but the right attitude is essential.”

One such Chef is Colin McSherry, who went on from SHU to work with Gordon Ramsey and Heston Blumenthal, he said: “I had already been working as a chef for a while when a friend suggested that SHU was a restaurant that could help take my cooking skills to the next level. Brian McCann’s approach is based on provenance and seasonality, and the knowledge and experience I gained as part of the SHU brigade has been the bedrock that I have built a career on that has taken me into some of the best restaurant kitchens in the world.”

The SHU Chef Apprenticeship Programme is one-year long and will commence on the 1st September 2017. Students will spend three days working in the SHU kitchen learning classical French and Modern European-inspired cooking. They will also spend two days at college, learning the theory and practical elements of the job within the Belfast Met curriculum. The programme will be 35 hours per week and will be paid with Chef’s whites provided.

Christine Brown, Head of Belfast Business School at Belfast Metropolitan College said: “Belfast Met is delighted to be involved in this partnership with SHU Restaurant.

“A collaboration like this which allows employer engagement at its centre is critical to the college and maximises opportunities for careers in the industry.

“It also ensures that our curriculum meets the needs of the industry and gives the next generation of employees the real-job skills to succeed in the workplace.”

Christine concluded “Upon successful completion of the Apprenticeship, students will receive a City & Guilds Level 2 Diploma in Professional Cookery, not to mention the money-can’t-buy experience that they will have on their CV.”
